Mashed Potato Ingredients:

3 lbs yukon gold potatoes

4 cloves garlic, crushed
-
4 liters of water for boiling
-
3 tsp salt for water
-
3 tsp salt for mashed potatoes (salt to taste)

1 tsp black pepper
-
2 oz butter (I used salted, but salt to your liking)
-
1/2 cup coconut milk (or regular milk, or cream)
-
1/4 cup olive oil
Caramelized Onion Ingredients:
-
1 sweet yellow onion, sliced into 1/4 inch long slivers
-
4 tbsp avocado oil (or olive oil)
Filet Ingredients:
-
2 6 oz filet mignon
-
2 oz butter
-
1 tsp paprika
-
1/2 tsp dried basil
-
1/2 tsp onion powder
-
1/2 tsp chili flakes
-
1/4 tsp cayenne pepper
-
1/2 tsp salt
-
1 1/2 tbsp dijon mustard
-
1/4 tsp black pepper
-
4 cloves garlic, diced
-
3 tbsp chives, diced
-
3 tbsp parsley, diced
-
3 tbsp lemon juice or juice of half of a lemon
Instructions:
Garlic Mashed Potatoes:
-
Wash potatoes, peel, and chop into 1 inch cubes

Smash 4 garlic cloves and peel off skin
-
Add garlic and potatoes to a large pot filled with 4L of cold water
-
Add 3 tsp of salt to pot and bring to a boil on med-high heat
-
Once it has reached boiling point, let it boil for 12 minutes or until fork tender
-
Pour into a strainer and add potatoes and garlic back to the pot over low heat or simmer
- Melt cream and butter together in microwave for 30 seconds
-
Add butter, coconut milk, and olive oil, and pepper to pot
-
Mash everything together with a potato masher and stir with a spoon until you have desired texture (don’t overmix or will become starchy instead of smooth)

Add desired amount of salt (I used 3 tsp)
Caramelized Onions:

Heat pan to med-high heat
-
Once heated, add avocado oil to heavily coat the pan
-
Add sliced onions to pan
-
Stir often until onions become transparent and soft
Filet Mignon:
-
Dice garlic, chives, and parsley
-
Squeeze the juice of half a lemon
-
Prep your spices before next step
-
To a low heated pan, add butter, dijon, spices, herbs, and lemon juice
-
Mix everything together so it's evenly dispersed
-
Place both filets onto pan and cook on low for around 8 minutes, drizzling the buttery sauce over the meat while it's cooking
-
Once flipped, repeat the same step until meat is cooked to your liking (I cooked to medium rare which was about 8 minutes low heat on both sides for me)
Plating:

Place garlic mashed potatoes onto plate
-
Add caramelized onions on the potatoes
-
Finally, add filet on top and spoon the buttery sauce from the pan
-
Add fresh parsley as a garnish. Enjoy!
